My Top Kitchen Equipment

wok

I know that some people feel intimated by Chinese cooking and worry that it is difficult to recreate dishes.  I really try my best to dispel this myth.  The truth is, Chinese food can be very simple and quick to prepare.  All you need is the right tools and a good recipe and the rest is simple.

I believe that you need just four pieces of equipment, most of which you probably have in your kitchen already.

1. Wok – I choose to cook with a wok because it’s fast and fun.  With a busy lifestyle, you want dinner to be on the table in no time.  Although most people use a wok for stir-fry's, you can actually use it for almost anything; blanching, braising, deep-frying, pan-frying, searing, smoking, steaming, stewing and stir-fry's. In fact, anything you would normally use a pan for.  This is the one-stop pot!

2. Wooden spatula – Simple tool for swishing ingredients in the wok.

3. Cook’s knife – We should all have a nice sharp knife in our kitchen.  Worth investing in a good quality all-purpose one.

4. Chopping board – Preferably bamboo as it lasts longer.

If you are just getting started or a seasoned cook, my Lotus Wok set may be just what you need.  Made from carbon steel, the Lotus Wok has a flattened base making it suitable for every kind of hob.  Inspired by the Lotus leaf, it uses the latest technology to blend an authentic Asian cooking style with the superior performance of modern cookware. The nano-silica coating ensures you can use metal utensils, can be heated to 400° C and the virtual non-stick coating is also PFOA free. There is no need to 'season' this wok, a natural seasoning builds up over use and the performance gets even better over time.

My set includes a 30cm Lotus Wok with a glass lid, a stainless steel steaming rack (which you can use to smoke foods as well as steaming too), pair of wooden chopsticks, wooden spatula and a copy of my cook book Eat Clean: Wok Yourself to Health, all for £49.99 + P&P from JML Direct.  I have an exclusive 10% discount code to use here.  Be quick as you only have to the end of March to redeem the offer!

I am very proud of my Lotus Wok and I hope you will enjoy using it as much as I do.

Happy wokking!

Love, Ching x
